Zesty Salmon & Soft Couscous

A vibrant, brain-boosting meal featuring flaky salmon, fluffy couscous, and steamed broccoli. Tossed in a gentle lemon-olive oil dressing to aid iron absorption and add a refreshing zest.

Ingredients

  • 60 grams Salmon Fillet
  • 0.25 cup Couscous
  • 2 florets Broccoli
  • 2 teaspoons Extra Virgin Olive Oil
  • 1 teaspoon Lemon Juice
  • 0.33 cup Boiling Water

Instructions

  1. Prepare the couscous: Place the dry couscous in a small heat-proof bowl. Pour over the boiling water (or low-sodium broth), cover, and let it sit for 5 minutes. Fluff with a fork.
  2. Prepare the salmon: Safety Step: Run your fingers over the salmon fillet to check for any tiny pin-bones. Remove them with tweezers if found.
  3. Season the salmon with a tiny pinch of black pepper and a drop of olive oil. Steam or pan-sear the salmon for 3-4 minutes per side until it flakes easily and is cooked through.
  4. Prepare the broccoli: Steam the small broccoli florets for 5 minutes until very tender. Finely chop them into 'confetti' size so they mix easily with the couscous.
  5. Once cooked, use a fork to flake the salmon into very small, bite-sized pieces.
  6. Make the dressing: In a small cup, whisk together the extra virgin olive oil and fresh lemon juice.
  7. In a serving bowl, combine the fluffed couscous, chopped broccoli, and flaked salmon.
  8. Drizzle the lemon dressing over the mixture and toss gently until well combined.
  9. Check the temperature and serve warm. The consistency should be moist; if it feels dry, add a teaspoon of warm water or extra oil.
