Zesty Salmon & Soft Couscous

A vibrant, brain-boosting meal featuring flaky salmon, fluffy couscous, and steamed broccoli. Tossed in a gentle lemon-olive oil dressing to aid iron absorption and add a refreshing zest.
Ingredients
- 60 grams Salmon Fillet
- 0.25 cup Couscous
- 2 florets Broccoli
- 2 teaspoons Extra Virgin Olive Oil
- 1 teaspoon Lemon Juice
- 0.33 cup Boiling Water
Instructions
- Prepare the couscous: Place the dry couscous in a small heat-proof bowl. Pour over the boiling water (or low-sodium broth), cover, and let it sit for 5 minutes. Fluff with a fork.
- Prepare the salmon: Safety Step: Run your fingers over the salmon fillet to check for any tiny pin-bones. Remove them with tweezers if found.
- Season the salmon with a tiny pinch of black pepper and a drop of olive oil. Steam or pan-sear the salmon for 3-4 minutes per side until it flakes easily and is cooked through.
- Prepare the broccoli: Steam the small broccoli florets for 5 minutes until very tender. Finely chop them into 'confetti' size so they mix easily with the couscous.
- Once cooked, use a fork to flake the salmon into very small, bite-sized pieces.
- Make the dressing: In a small cup, whisk together the extra virgin olive oil and fresh lemon juice.
- In a serving bowl, combine the fluffed couscous, chopped broccoli, and flaked salmon.
- Drizzle the lemon dressing over the mixture and toss gently until well combined.
- Check the temperature and serve warm. The consistency should be moist; if it feels dry, add a teaspoon of warm water or extra oil.
