No-Sugar Apple & Cinnamon Muffins

Ingredients
- 2 medium Sweet Apples (Gala or Fuji)
- 1.5 cups Whole-Wheat Flour
- 1 large Egg
- 0.5 cup Whole Milk
- 0.25 cup Unsalted Butter
- 1.5 teaspoons Baking Powder
- 1 teaspoon Ground Cinnamon
Instructions
- Preheat your oven to 180°C (350°F). Grease a mini-muffin tin with a little coconut oil or butter.
- Prepare the apples: Peel and finely grate the apples. If they are very juicy, lightly squeeze out some of the excess liquid so the muffins aren't too soggy.
- In a large bowl, whisk together the egg, melted butter (or oil), and milk until well combined.
- Stir the grated apples into the wet mixture.
- In a separate bowl, mix the whole-wheat flour, baking powder, and cinnamon.
- Gently fold the dry ingredients into the wet ingredients. Stir until just combined; do not overmix, as this makes the muffins tough.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
- Safety Step: Allow the muffins to cool completely. For younger toddlers, break the muffin into bite-sized pieces to ensure they are easy to chew and swallow.
- Serve warm or at room temperature.
