No-Sugar Apple & Cinnamon Muffins

Soft, fluffy muffins naturally sweetened with grated apples and a touch of cinnamon. A fiber-rich snack that is gentle on blood sugar levels and perfect for little hands.

Ingredients

  • 2 medium Sweet Apples (Gala or Fuji)
  • 1.5 cups Whole-Wheat Flour
  • 1 large Egg
  • 0.5 cup Whole Milk
  • 0.25 cup Unsalted Butter
  • 1.5 teaspoons Baking Powder
  • 1 teaspoon Ground Cinnamon

Instructions

  1. Preheat your oven to 180°C (350°F). Grease a mini-muffin tin with a little coconut oil or butter.
  2. Prepare the apples: Peel and finely grate the apples. If they are very juicy, lightly squeeze out some of the excess liquid so the muffins aren't too soggy.
  3. In a large bowl, whisk together the egg, melted butter (or oil), and milk until well combined.
  4. Stir the grated apples into the wet mixture.
  5. In a separate bowl, mix the whole-wheat flour, baking powder, and cinnamon.
  6. Gently fold the dry ingredients into the wet ingredients. Stir until just combined; do not overmix, as this makes the muffins tough.
  7. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  8. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  9. Safety Step: Allow the muffins to cool completely. For younger toddlers, break the muffin into bite-sized pieces to ensure they are easy to chew and swallow.
  10. Serve warm or at room temperature.
