Avocado & Egg Toast

Ingredients
- 1 large Egg
- 0.5 piece Ripe Avocado
- 1 slice Whole Wheat Bread
- 0.5 teaspoon Lemon Juice
- 0.5 teaspoon Extra Virgin Olive Oil
- 1 pinch Dried Oregano
Instructions
- Place the egg in a small pot and cover with cold water. Bring to a boil, then simmer for 9-10 minutes to ensure it is fully hard-boiled.
- Once cooked, place the egg in an ice bath for 2 minutes. Peel and chop it into small, manageable pieces for your toddler.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add the lemon juice and olive oil.
- Mash with a fork until creamy but with some small, soft texture remaining.
- Lightly toast the bread. It should be firm but not crunchy or sharp.
- Safety Step: Remove the crusts from the toast to ensure it is easy for the toddler to chew and swallow.
- Spread the avocado mash evenly across the toast.
- Top the avocado with the chopped hard-boiled egg. Press down slightly with a fork so the egg 'sticks' to the avocado and doesn't fall off during self-feeding.
- Add a tiny pinch of dried oregano or nutritional yeast for extra flavor (optional).
- Cut into small squares or 'fingers' (soldiers) before serving.
