Tuna Nicoise-style Salad

A toddler-safe version of the classic French salad. Packed with protein, healthy fats, and colorful vegetables like tender green beans, potatoes, and boiled eggs.
Ingredients
- 0.25 cup Canned Light Tuna
- 0.5 piece Hard-Boiled Egg
- 0.5 medium Potato
- 0.25 cup Green Beans
- 2 pieces Cherry Tomatoes
- 2 pieces Pitted Black Olives
- 1 teaspoon Extra Virgin Olive Oil
- 0.5 teaspoon Lemon Juice
Instructions
- Prepare the potatoes and beans: Peel and dice the potato into small 1cm cubes. Trim the green beans and cut them into short 1-2cm lengths.
- Boil the potato cubes in water for about 10-12 minutes until soft. Add the green beans for the last 5 minutes of boiling. Safety Step: Ensure the beans are very tender and not 'crunchy' as this can be a choking risk.
- Boil the egg until hard-boiled (about 9-10 minutes). Cool, peel, and cut into small bite-sized pieces.
- Prepare the tuna: Drain the canned light tuna thoroughly. Flake it into small, manageable pieces with a fork.
- Prepare the vegetables: Quarter the cherry tomatoes and finely chop the pitted olives. Safety Step: Never serve olives or cherry tomatoes whole as they are high choking risks.
- Make the dressing: In a small bowl, whisk together the extra virgin olive oil and fresh lemon juice.
- Assembly: In a large bowl, gently toss the cooked potatoes, beans, tuna, tomatoes, and olives with the dressing.
- Safety Step: Ensure all ingredients are cut to a safe size and are soft enough to be easily mashed with a fork or the toddler's molars.
- Serve at room temperature or slightly chilled.
