Full English Baby Breakfast

A toddler-friendly version of the classic hearty breakfast. Includes soft scrambled eggs, homemade mini turkey patties, grilled mushrooms, and tomatoes. High in protein and iron to fuel a busy morning.
Ingredients
- 1 large Egg
- 40 grams Minced Turkey or Chicken
- 2 tablespoons No-Added-Sugar Baked Beans
- 2 pieces Button Mushrooms
- 2 pieces Cherry Tomatoes
- 1 slice Whole-Wheat Bread
- 1 tablespoon Whole Milk
- 2 teaspoons Olive Oil
Instructions
- Prepare the poultry patties: Mix the minced turkey or chicken with a pinch of dried herbs (like oregano). Form into 2 small, flat discs. Pan-fry with a drop of olive oil for 3-4 minutes per side until fully cooked and tender. Cut into bite-sized quarters.
- Prepare the vegetables: Slice the mushrooms thinly and cut the cherry tomatoes in half.
- Sauté: In a small non-stick pan, add a drop of olive oil and sauté the mushrooms and tomatoes over medium heat for 4-5 minutes until very soft. Set aside.
- Toast the bread: Toast the whole-wheat bread until lightly golden. Remove the crusts if they are too hard for your toddler, and cut the toast into 'soldiers' (long strips).
- Prepare the eggs: Whisk the egg with a splash of milk. In the same pan used for the vegetables, scramble the egg over low heat until soft and fluffy. Do not overcook.
- Warm the beans: If using canned baked beans, choose a 'no added sugar or salt' variety. Warm them gently in a small saucepan.
- Assembly: Arrange the scrambled eggs, poultry patty pieces, soft vegetables, toast soldiers, and a small spoonful of beans on a toddler plate.
- Safety Step: Ensure all components have cooled to a safe temperature before serving. Check that the tomato skins are soft enough or remove them if necessary.
