Frozen Yogurt Bark with Fruit & Granola

A refreshing and healthy frozen snack made with creamy Greek yogurt, topped with colorful berries and soft crushed granola. Perfect for teething toddlers and hot summer days.
Ingredients
- 1 cup Full-Fat Greek Yogurt
- 0.25 cup Strawberries
- 0.25 cup Blueberries
- 2 tablespoons Granola
- 1 teaspoon Honey
- 0.25 teaspoon Vanilla Extract
Instructions
- Prepare the tray: Line a small baking sheet or a flat airtight container with parchment paper.
- Prepare the yogurt: In a bowl, mix the Greek yogurt with the vanilla extract and honey (or maple syrup). Stir until smooth.
- Prepare the fruit: Wash the berries. Safety Step: Slice blueberries in half lengthwise and finely dice the strawberries into very small pieces (about 0.5cm). Large whole berries can be a choking hazard when frozen solid.
- Prepare the granola: Safety Step: Place the granola in a bag and crush it into very fine crumbs. Avoid any large chunks or whole nuts.
- Spread the yogurt: Pour the yogurt onto the parchment paper and spread it evenly to a thickness of about 1cm. Do not make it too thin, or it will shatter into sharp shards.
- Top the bark: Sprinkle the diced strawberries, halved blueberries, and crushed granola evenly over the yogurt.
- Gently press the toppings down into the yogurt with the back of a spoon to ensure they stick and soften slightly.
- Freeze: Place the tray in the freezer for at least 3-4 hours, or until completely solid.
- Safety Step: Remove from the freezer and break into small, irregular 'bark' pieces. Let them sit at room temperature for 1-2 minutes before serving so they soften slightly and aren't too hard for toddler teeth.
- Store any remaining pieces in an airtight container in the freezer.
