Baked Salmon with Sweet Potato Mash

Ingredients
- 80 grams Salmon Fillet
- 1 medium Sweet Potato
- 1 teaspoon Lemon Juice
- 1 teaspoon Unsalted Butter
- 1 tablespoon Whole Milk
- 0.5 teaspoon Extra Virgin Olive Oil
- 1 teaspoon Fresh Dill
Instructions
- Preheat your oven to 180°C (350°F). Line a small baking dish with parchment paper.
- Prepare the sweet potato: Peel the sweet potato and cut it into small cubes. Steam or boil the cubes for 12-15 minutes until very soft.
- Prepare the salmon: Place the salmon fillet on the baking dish. Rub it with a tiny drop of olive oil and a squeeze of fresh lemon juice.
- Bake the salmon for 10-12 minutes until it is cooked through and flakes easily with a fork.
- Safety Step: Remove the salmon from the oven. Using your fingers or a fork, flake the fish into very small pieces. Carefully feel through every piece to ensure there are absolutely no small bones.
- Make the mash: Drain the sweet potato and mash it thoroughly with a fork or potato masher. Stir in a teaspoon of unsalted butter and a splash of milk for extra creaminess.
- Stir the finely chopped dill into the mash or sprinkle it over the salmon flakes.
- Serve the salmon flakes alongside or mixed into the sweet potato mash.
