Creamy Chia & Mango Pudding

A refreshing, no-cook pudding packed with Omega-3s and fiber. Creamy coconut or dairy milk combined with tiny chia seeds and topped with sweet, sun-ripened mango cubes.

Ingredients

  • 2 tablespoons Chia Seeds
  • 0.5 cup Whole Milk or Coconut Milk
  • 0.25 cup Fresh Mango
  • 1 drop Vanilla Extract

Instructions

  1. In a small jar or bowl, combine the chia seeds and your choice of milk (whole milk or unsweetened coconut milk works best for creaminess).
  2. Add a drop of pure vanilla extract and stir vigorously for about 1-2 minutes. This prevents the seeds from clumping at the bottom.
  3. Cover the container and place it in the refrigerator. Let it sit for at least 4 hours, or ideally overnight, until it reaches a thick, pudding-like consistency.
  4. Prepare the mango: Peel the mango and remove the pit. Cut the flesh into very small, uniform cubes (about 0.5cm) that are safe for an 18-month-old to chew.
  5. Before serving, give the pudding another good stir. If it is too thick, add a teaspoon of milk to loosen it.
  6. Safety Step: Ensure the chia seeds have fully expanded and softened. They should not be crunchy.
  7. Top the pudding with the mango cubes. You can also mash a few pieces of mango into a puree and swirl it through the pudding for extra sweetness.
  8. Serve chilled.
