Walnut & Raisin Energy Bars

Simple no-bake energy bars made with just walnuts, raisins, oats, and a dash of cinnamon. Chewy, naturally sweet, and incredibly easy to prepare — a wholesome alternative to shop-bought snack bars.
Ingredients
- 0.25 cup Rolled Oats
- 1 teaspoon Ground Cinnamon
- 0.5 teaspoon Vanilla Extract
Instructions
- In a food processor, pulse the oats until finely chopped. Add the walnuts (1 cup / 110g) and pulse until coarsely ground.
- Add the raisins (1 cup / 150g), cinnamon, and vanilla extract. Blend on high until the mixture forms a sticky mass that holds together when pressed. Add water one tablespoon at a time if too dry.
- Line a small loaf tin or container with baking paper. Press the mixture firmly and evenly into the tin.
- Refrigerate for at least 1 hour until set, then slice into bars or small squares.
- Safety note: Cut into thin fingers or small pieces for toddlers. Ensure tree nuts have been safely introduced.
