Tender Chicken and Tomato Basil Pasta

Ingredients

  • 200 grams Whole Wheat Conchiglie Pasta
  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 2 clove Garlic
  • 4 medium Tomatoes
  • 1 medium Cooked Chicken Breast
  • 150 ml Low-Sodium Chicken Stock
  • 3 tablespoons Fresh Basil
  • 1 teaspoon Balsamic Vinegar
  • 50 grams Parmesan Cheese

Instructions

  1. Cook the whole wheat pasta in boiling water until tender, then drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat and sauté the chopped onion until soft and translucent.
  3. Add the crushed garlic and diced tomatoes to the pan, cooking for about one minute until the tomatoes begin to soften.
  4. Stir in the diced cooked chicken, chicken stock, chopped basil, and balsamic vinegar.
  5. Add the cooked pasta to the skillet and toss everything together until well combined and heated through.
  6. Remove from the heat and stir in the grated parmesan cheese before serving warm.
