Sweet Potato & Oat Teething Bars

Ingredients
- 2 cups Rolled Oats
- 1 cup Cooked Sweet Potato
- 2 tablespoons Unsalted Butter
- 1 tablespoon Chia Seeds
- 1 teaspoon Vanilla Extract
- 0.5 teaspoon Ground Cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Place the rolled oats into a food processor and pulse until they reach a fine, flour-like consistency.
- In a medium mixing bowl, stir together the oat flour, mashed sweet potato, melted butter, chia seeds, vanilla, and cinnamon until a thick dough forms.
- Place the dough between two sheets of parchment paper and roll it out to about 1/4-inch thickness.
- Use a knife or pizza cutter to slice the dough into small rectangular bars, roughly the size of an adult finger.
- Arrange the bars on the prepared baking sheet and bake for 25 minutes, flipping them over halfway through the cooking time.
- Allow the bars to cool completely on the tray to firm up before serving.
