Savory Baked Oatmeal Bars with Spinach & Broccoli

Soft, savory baked oatmeal bars loaded with finely chopped spinach, broccoli, and sweet potato. Cut into finger-sized strips, these are perfect for self-feeding and introduce baby to savory breakfast flavors beyond the usual sweet porridge.

Ingredients

  • 1 cup Rolled Oats
  • 1 small Sweet Potato
  • 4 florets Broccoli
  • 1 handful Fresh Spinach
  • 1 large Egg
  • 0.25 cup Whole Milk
  • 1 teaspoon Tomato Paste
  • 1 tablespoon Olive Oil
  • 0.5 teaspoon Baking Powder

Instructions

  1. Preheat oven to 180°C (350°F). Line a small baking dish (about 20x15cm) with parchment paper.
  2. Steam the broccoli florets for 5-6 minutes until very soft. Finely chop them.
  3. Peel and cube the sweet potato. Microwave or steam for 8-10 minutes until soft. Mash with a fork.
  4. Wilt the spinach in a small pan for 1-2 minutes, then finely chop.
  5. In a bowl, combine the oats, mashed sweet potato, chopped broccoli, chopped spinach, egg, milk, tomato paste, olive oil, and Italian seasoning. Mix well.
  6. Spread the mixture evenly into the prepared baking dish. Press down gently with the back of a spoon.
  7. Bake for 30-35 minutes until firm and lightly golden on top.
  8. Cool completely in the dish before cutting into finger-sized bars (about 2cm wide, 6cm long).
  9. Serve at room temperature. Baby can hold the bars and self-feed.
