Homemade Rainbow Veggie Pizza

Making your own pizza dough is a wonderful way to control the ingredients and keep salt levels low for your toddler. Ingredients
- 2 cups Whole-Wheat Flour
- 1 tablespoon Baking Powder
- 2 tablespoons Olive Oil
- 0.75 cup Warm Water
- 4 tablespoons Tomato Passata
- 100 grams Mozzarella Cheese
- 4 pieces Cherry Tomatoes
- 2 tablespoons Sweetcorn
- 50 grams Broccoli
- 0.25 piece Red Bell Pepper
- 0.25 piece Yellow Bell Pepper
Instructions
- In a large bowl, mix the whole-wheat flour and baking powder. Make a well in the center.
- Pour the warm water and olive oil into the well. Stir with a spoon until a shaggy dough forms.
- Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic. Cover with a clean cloth and let it rest for 15 minutes.
- Preheat your oven to 200°C (400°F) and line a large baking tray with parchment paper.
- Roll out the dough into a large circle or rectangle (about 0.5cm thick) and place it on the prepared tray.
- Spread the tomato passata evenly over the base, leaving a small gap at the edges for the crust.
- Sprinkle the grated mozzarella cheese over the sauce.
- Prepare the rainbow toppings: slice the cherry tomatoes, dice the peppers, and chop the broccoli into very small, bite-sized florets.
- Arrange the vegetables in colorful rows: red (tomatoes/peppers), orange/yellow (peppers/corn), and green (broccoli).
- Bake for 12–15 minutes until the cheese is bubbly and the crust is golden and firm.
- Let the pizza cool slightly, then slice into small fingers or wedges that are easy for your toddler to hold.
