Cocoa & Date Fudge Balls

Rich, fudgy no-bake bites made with dates, walnuts, cocoa, and chia seeds, finished with a coconut coating. All the indulgence of chocolate fudge with none of the added sugar.
Ingredients
- 10 pieces Medjool Dates
- 1 tablespoon Chia Seeds
- 1 teaspoon Vanilla Extract
Instructions
- Add the walnuts (1 cup / 105g) to a food processor and pulse until finely chopped with no large pieces remaining.
- Add the pitted dates, cocoa powder (3–4 tablespoons unsweetened), chia seeds, shredded coconut (1/4 cup unsweetened), and vanilla extract.
- Blend on high for 1–2 minutes until the mixture becomes sticky and easily holds together when pressed between your fingers.
- Using a small scoop or tablespoon, portion the mixture and roll into bite-sized balls.
- Optionally roll each ball in extra shredded coconut for a finishing coat.
- Refrigerate for at least 20 minutes before serving.
- Safety note: Cut each ball in half for toddlers. Ensure tree nuts have been safely introduced.
