Chicken & Veggie Stars

These fun, star-shaped chicken patties are packed with hidden veggies like carrots and mushrooms. Soft, delicious, and perfectly sized for little hands, they make an ideal finger food for babies starting baby-led weaning or a fun lunch for toddlers. The whole family can enjoy these!

Ingredients

  • 300 grams Ground Chicken
  • 1 small Carrot
  • 0.25 piece Onion
  • 50 grams Button Mushrooms
  • 1 teaspoon Fresh Thyme
  • 50 grams Breadcrumbs
  • 30 grams Grated Parmesan
  • 1 tablespoon Olive Oil

Instructions

  1. Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper.
  2. Place the carrot, onion, and mushrooms in a food processor. Pulse until they are finely minced.
  3. Add the ground chicken, thyme, breadcrumbs, and grated cheese to the processor. Pulse a few more times until the mixture is well combined and slightly sticky.
  4. Transfer the mixture to a clean surface and flatten it to about 1.5 cm (half an inch) thick. Use a star-shaped cookie cutter to cut out stars. Re-flatten the leftover offcuts to make more stars.
  5. Arrange the stars on the baking sheet. You can lightly brush them with a bit of olive oil for a beautiful golden finish.
  6. Bake for 15 to 18 minutes, or until the chicken is thoroughly cooked (no pink inside) and golden brown. Let them cool slightly before serving to your little one.
