Broccoli & Cheese Fritters

Golden, pan-fried fritters packed with steamed broccoli and melted cheddar. Soft enough for baby to bite through but firm enough to hold as a finger food. The cheese melts through and adds a flavor that encourages babies to eat their greens.
Ingredients
- 1 cup Broccoli
- 1 large Egg
- 0.25 cup Cheddar Cheese
- 2 tablespoons Plain Flour
- 0.25 teaspoon Garlic Powder
- 1 tablespoon Olive Oil
Instructions
- Steam the broccoli florets for 6-7 minutes until very soft. Drain well and chop finely. Some small soft lumps are fine — they add texture.
- In a bowl, combine the chopped broccoli, beaten egg, grated cheddar, flour, and garlic powder. Mix well.
- Heat olive oil in a non-stick pan over medium heat.
- Drop tablespoons of the mixture into the pan and flatten gently with the back of the spoon into small patties about 5cm wide.
- Cook for 2-3 minutes per side until golden brown and firm.
- Drain on a paper towel and cool for 5 minutes before serving.
- Serve as finger food — baby can pick them up and self-feed.
