20-Minute Creamy Broccoli Mac & Cheese

A quick, one-pot comfort meal that's perfect for busy weeknights. This version includes finely chopped broccoli that cooks right with the pasta, making it a great way to introduce greens in a creamy, kid-approved sauce.
Ingredients
- 1.5 cups Shell or Elbow Pasta
- 2 cups Broccoli Florets
- 2 tablespoons Unsalted Butter
- 2 tablespoons All-purpose Flour
- 1 cup Whole Milk
- 1.5 cups Shredded Cheddar Cheese
- 0.25 teaspoon Garlic & Onion Powder
Instructions
- Bring a large pot of water to a boil. Add the pasta and cook for about 5 minutes.
- Add the small broccoli florets to the same pot with the pasta and continue boiling for another 3-4 minutes until both are tender. Drain and set aside.
- In the same pot (now empty), melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
- Gradually pour in the milk, whisking constantly to avoid lumps. Stir in the garlic powder and onion powder. Let it simmer for 2-3 minutes until the sauce thickens.
- Remove from heat and stir in the shredded cheese until completely melted and smooth.
- Add the cooked pasta and broccoli back into the pot. Toss well to coat. If it's too thick, add a tablespoon of warm milk or water until you reach the desired consistency.
