20-Minute Creamy Broccoli Mac & Cheese

A quick, one-pot comfort meal that's perfect for busy weeknights. This version includes finely chopped broccoli that cooks right with the pasta, making it a great way to introduce greens in a creamy, kid-approved sauce.

Ingredients

  • 1.5 cups Shell or Elbow Pasta
  • 2 cups Broccoli Florets
  • 2 tablespoons Unsalted Butter
  • 2 tablespoons All-purpose Flour
  • 1 cup Whole Milk
  • 1.5 cups Shredded Cheddar Cheese
  • 0.25 teaspoon Garlic & Onion Powder

Instructions

  1. Bring a large pot of water to a boil. Add the pasta and cook for about 5 minutes.
  2. Add the small broccoli florets to the same pot with the pasta and continue boiling for another 3-4 minutes until both are tender. Drain and set aside.
  3. In the same pot (now empty), melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
  4. Gradually pour in the milk, whisking constantly to avoid lumps. Stir in the garlic powder and onion powder. Let it simmer for 2-3 minutes until the sauce thickens.
  5. Remove from heat and stir in the shredded cheese until completely melted and smooth.
  6. Add the cooked pasta and broccoli back into the pot. Toss well to coat. If it's too thick, add a tablespoon of warm milk or water until you reach the desired consistency.
